Make this fun Cheese Quesadilla in the shape of a Jack O’ Lantern this Halloween. Just three simple ingredients and perfect for sharing!

If you want to create a fun Halloween lunch or snack for the kids but don’t have tonnes of time then this is the recipe for you.
With just three simple ingredients you can make this spooky Jack O’ Lantern Cheesy Quesadilla that’s perfect for tearing and sharing.

You will need two tortilla wraps.
I’ve used large tortilla wraps but you could also make them with small wraps too.

Use a round cutter to make two holes for the eyes. If you don’t have a round cutter than use anything circle shaped to cut around the outline with a knife. Then use the knife by itself to cut out the holes.
Cut two small rectangles for the nose.
For the mouth use the knife to cut a smile shape. Then cut lines through the mouth.

Place the second uncut tortilla wrap onto a baking tray.
Top with grated Red Leicester cheese.

Place the cut wrap on top and then bake in the oven at 200c for 8 minutes.

When cooked, insert a sugar snap pea into the top for the stalk of the pumpkin.

The cheese will be very hot so leave it to cool for a few minutes and then it’s ready to serve up.
Tear it apart to get that wonderful cheese pull!

Jack O’ Lantern Cheese Quesadilla

Ingredients
- 2 large tortilla wraps
- 75g grated Red Leicester cheese
- 1 sugar snap pea
Instructions
- Preheat the oven to 200c fan.
- Take one of the tortilla wraps. Use a round cutter to make two holes for the eyes. If you don’t have a cutter then use anything circle shaped to cut around the outline with a knife. Then use the knife by itself to cut out the holes.
- Cut two small rectangles for the nose.
- For the mouth use the knife to cut a smile shape. Then cut lines through the mouth.
- Place the second uncut tortilla wrap onto a baking tray and add the grated cheese.
- Place the cut tortilla wrap on top and bake for 8 minutes.
- When cooked, insert the sugar snap pea into the top of the quesadilla.
- Allow to cool for a few minutes before tearing apart and eating!
Notes
This recipe is best eaten immediately after cooking.
