  • Olive Oil. This recipe is best with extra virgin olive oil.

  • Red Pepper Flakes. For just a hint of heat. Use more or less, depending on what you like.
  • Salt & Pepper. To taste.

How to Make Steamed Broccoli Rabe

1. Wash a bunch of broccoli rabe and place it on a cutting board. Cut off the tips of the broccoli rabe stems and discard. Then slice the bunch in the middle, separating the leaves from the thick stems. Place them into two separate bowls.

2. Pour the olive oil into a large pot and add the garlic. Cook the garlic over medium-low heat until it starts to brown.

3. Now add water and the stems of the broccoli rabe. Cover the pot tightly with a lid and let it cook for 15 minutes.

4. Add in the leafy parts by placing the leaves right on top of the stems and then season them with salt. Cover again and cook for another 15 minutes, making sure that there is enough liquid left. Taste, and then add more salt and black pepper if needed.

  • Use fresh broccoli rabe. Choose a fresh bunch that has nice green stems and firm, small heads. Remove any parts that appear yellow before you start cooking.
