What is Spring Mix
Spring mix is a term used for a collection of greens, usually containing spinach, tender baby lettuce, arugula, young beet leaves, and others. It may also include red and green romaine, chard, endive, and radicchio.
Main Ingredients
- Spring Mix.
- Cucumbers.
- Tomatoes.
- Avocadoes.
- Onion.
- Seeds or nuts. I used pumpkin and sunflower seeds.
- Cheese. Feta, blue cheese, and mozzarella pearls are all perfect for this salad.
- Dressing ingredients. Olive oil, apple cider vinegar, mustard, garlic, maple syrup, salt, and black pepper.
How to make Spring Salad
1. To a small jar, add the olive oil, apple cider vinegar, mustard, garlic, maple syrup, salt, and pepper. Cover with a tight lid and shake well.

2. To a large mixing bowl, add the spring mix, cucumbers, tomatoes, avocado, onion, feta cheese, pumpkin seeds, and sunflower seeds. Pour the dressing on top and mix well. Serve immediately.
