Keepin’ It Real Apple Cinnamon Pancakes

It was a sunny Saturday afternoon and I thought it was a good time to whip up a batch of homemade apple cinnamon pancakes as we had been given a load of cooking apples that had been patiently awaiting some inspiration.  Phil cooked the whole lot into a chunky applesauce a couple of nights earlier and I wanted to see what else could be done with them.

I’ve been saying for a while that I should make some pancakes for the freezer to pull out as snacks for the kids as they love that.  Usually I make zucchini pancakes, but let’s go with the autumn harvest and our bountiful apples on this fine day.

I’d been wanting to try out the new Green Earth frying pan and kitchen scale Ozeri sent me and this was the perfect opportunity!  (this post contains affiliate links) I gathered up my recipe and ingredients and set to work.  I’ll be honest that I hadn’t made this particular recipe with apples before, so I knew it would take a little adjusting.  But that’s okay – it’s part of the baking process.

Apple Cinnamon Pancakes (Keepin’ it real style)

  • 8 oz Flour
  • 1.5 oz Sugar
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1 egg
  • 1 teaspoon oil
  • 2/3 Cup milk
  • 4 oz apple sauce

I measured out the flour and sugar on the sleek black Ozeri scale.  My old scale is bulky and not terribly accurate.  This slimline scale will just slide into the cupboard after it’s easily wiped clean.

It can be set to lbs/oz, fl. oz, oz, gr, and ml, which is a big help to me as I make recipes from both North America and the UK/Europe and the measurements are different.  It’s large enough to fit a mixing bowl on top, then zero the scale and add in your ingredients for a precise measurement. (It’s also sensitive enough that I’ll be able to use it for weighing mail to ensure I get the correct amount of postage on it).

After mixing my dry ingredients, I whisked up the wet ingredients and added them to the dry and mixed just until wet.  You may have to adjust the milk to get the right consistency.  This batter is quite thick, but not too thick.

After my ingredients were mixed and ready, I heated up my Green Earth frying pan and started pouring in the pancake batter.  The pan was heating evenly and as I moved it a little to adjust it over the fire, I couldn’t help but notice the cozy handle (Phil laughed at me when I told him to come feel the cozy handle)! But it’s a little soft, and gives a nice grip so that you don’t burn yourself or find it awkward to lift.

Then I remembered why I hadn’t used my fresh new pan yet…I didn’t have a silicon turner!  I didn’t want to damage the non-stick surface of this pan, but I hadn’t yet made it into the city to purchase one….so, keepin’ it real…I searched the utensil drawer and found a spatula I thought I could use.  It wasn’t ideal and it meant I couldn’t flip those apple pancakes over as quickly as I should have…but it did the job.

This was the first time in YEARS that my pancakes didn’t turn out a very dark burnt colour.  Honestly, they would have been nice and golden if I’d had the right utensils!  I’ve been saying to myself for a couple of years how I’d love to have a good pan for pancakes (I love my cast iron, but it’s not great for ‘cakes).  And I have my eye on this set of silicone spatulas that I saw on Ozeri’s Facebook page (after 10 years together, Phil and I could use a few replacement items that this includes).

I told you I was keepin’ it real, and as you can see; this is how life goes for us at times….

…..this is all that was left of my pancakes by the time I could get a photo!  Family kept coming in and sneaking them one by one while I had my back turned flipping over another pancake….and of course they took the ‘nice’ ones!  (I will take better photos the next time I make them) All in a day’s work here!

One more thing that I should mention is that one of the reasons I use cast-iron pans is because I don’t like the thought of the ‘stuff’ put into non-stick pans to make them that way, but this pan is 100% PTFE and PFOA free (no heavy metals or chemicals).

Did I mention that everyone was happy coming in to steal the pancakes but disappeared when it was time to clean up?  But not to worry, cleaning up my new Ozeri products was a breeze!  I could get used to a life of golden pancakes and non-stick, easy-clean pans!
